A Non-Hypothetical and Incentive Compatible Method for Estimating Consumer Willingness-to-Pay for a Novel Functional Food: The Case of Pomegranates AgEcon

A preference and valuation mechanism that compared results of an experimental auction and nonhypothetical preference rankings was developed and used to elicit preferences for pomegranate products from a representative sample of shoppers in Texas. Familiarity with pomegranate products increased willingness-to-pay (WTP) for pomegranates, as did tasting and providing additional information on the health benefits of the products. Ready-to-eat and juice products were preferred to whole fruit products. Bayesian Estimation of a Censored AIDS Model for Whole Grain Products AgEcon

When using household-level data in examining consumer's demand it is common to find that consumers purchase only a subset of the available goods, setting the demand for the remaining goods to zero. Ignoring such censoring of the dependent variables in the estimation can lead to biased parameter estimates. In this paper we investigate the household's demand for six types of whole grain and non-whole grain breakfast cereals and products using a censored Almost Ideal Demand System (AIDS) and estimate the parameters of the demand system via Bayesian methods. Considering most children spend a majority of their weekdays at school and, on average, obtain more than one-third of their daily caloric intake from meals consumed at school during the school year, school is a natural place to implement nutrition policies that would help develop healthy eating habits and improve health and well-being of children. At the same time, local school meal policies may influence what foods are offered and how the foods are prepared. Consumer Choices and Welfare Gains from New, Healthy Products: A Virtual Price Approach AgEcon

This paper models consumer food choices with respect to different margarine and spread brands that include a new healthy brand. The results show that the older and smaller size households with higher income and higher education are more likely to purchase the healthy brand. An Almost Ideal Demand System for six brands was estimated and the coefficients were used to calculate price and brand expenditure elasticities in order to examine the responsiveness of the consumers to economic variables.

An important dimension of product differentiation and segregation for specialty crops is the added handling and transaction costs incurred. Some forms of business organization may realize lower costs of providing such services, and if specialty crop production is growing relative to commodity production, these two factors may have implications for industry structure. We use data from an Iowa grain handling survey to test hypotheses developed in the non-empirical transaction-costs literature with respect to organizational and financial governance of cooperatives and private and corporate firms.
